With Spaghetti and meat sauce, but also with classic Italian Spaghetti with garlic and oil, the Bitornino, though young, comes from an important source. This wine has crisp fruit, low acidity and tannin-mineral freshness. It is even more dynamic and robust when served chilled, perfectly paired with first courses.

The comment of our oenologist

The base wine of the Frascole winery: Bitornino with 12,5% of alcohol. An easy to drink wine, that the French would call a "vin de soif". Faded in color, with open perfumes, gentle. However, there is substance and density of sensations.

Terroir
Only a few minutes from Florence, yet the vegetation is significantly barer than what we may think. Loamy-clay soils, originated from the disruption of the Marne di Vicchio (marls and clay marls) with intercalations of thin sandy layers. The climate, which is influenced by the proximity of the Apennines, is cooler especially during the night, which enhances the perfumes of the wines. Vineyards altitude: 350 above sea level.

Cultivation Method
Spur cordon. Implant year: 1967 and 1970. Implant density: old vineyards 2.800 plants/ha.
Vinification & Aging
Manual harvest. Destemming and crushing. Fermentation in inox tanks of 110 hl at a controlled temperature (not over 28°-30°C) for 10 days. Malolactic fermentation in concrete tanks. Aging: 12 months in concrete tanks.
Analytical Data
Bottling: in spring. Total acidity: 5,00 g/l. Dry extract: 26,50 g/l. Alcohol: 13,50 % vol.
