The comment of our oenologist

Dolcetto d'Alba. Dolcetto is another minor grape variety of the immense Italian varietal range. This autochthonous grape from the Piedmont is almost exclusively cultivated in this region. Two main concepts of work lie behind this grape varietal. First, the concept according to which a maceration of a few days and low temperatures of fermentation seek the maximum expression of pulp and fruit. On the other hand, we have here the dolcetto in its more classic version, which creates a fine and floral wine with bitter fruits like marasca cherries. A wine that requires a thin glass.
