The comment of our oenologist

Sagrantino di Montefalco: 100% Sagrantino grapes, long maceration in the fermentation phase and important aging of 28 months in oak barrels. Perfect expression of the vine and the terroir: classic, balsamic, earthy – in the mouth broad, yet defined. Without doubts a wine whose greatness is rather expressed in the taste than in the aromas. A product made for an audience that searches the true character of Umbria.

Terroir
In the centre of Umbria, only a few miles from Assisi: Montefalco - the myth. The extremly warm and dry weather is reflected in the compressed vegetation; there is no marine influence, as we are in the centre of the Italian peninsula. Sagrantino is a great vine with an extremely low production though. During the aging phase of the wine, Adanti carefuly seeks elegance without undermining the austere character of the vine. North-West exposure at 250 m above sea level, West exposure at 360 m above sea level on a sandy and calcareous loamy soil. Mild weather.

Cultivation Method
Manual harvest in the first half of October.
Vinification & Aging
Grapes destemming and crushing, maceration and fermentation in inox steel tanks at a controlled temperature of 28°C for approximately 21 to 24 days. Aging in oak barrels (30 Hl) and Tonneau for 28 months and subsequently in the bottles for 12 months.
Analytical Data
Vintage 2006: 24.000 bottles. Alcohol: 14% vol.
Longevity
A wine that should age longer (>10 years) in the bottle, as it will taste even better with every additional year.

To Decant
Please decant with a short transition and in a thin stream.
