The comment of our oenologist

The Ole has a faded color but it could not be different. The great work that has been done in the aging of this wine is immediately perceivable; everything is perfectly balanced - the perfumes are very sophisticated, light and slender. Glyceric mouth in the beginning, and then absolute focus on a vibrant and emotional wine. I would serve it cold in the summer, maybe with some grilled tuna. In the fall, it could accompany a country picnic with Bresaola and toasted bread.

Terroir
Historic vineyards implanted on terroirs with terracings, located on the side of the Rhaetian Alps of Valtellina, south exposure. Altitudes that ranges from 400 to 450 m, with declines between 30% to 70%. The soils and are mainly sandy with acids. Dry weather, with extreme contrast between the mountain air and the mild currents of the lake of Como.

Cultivation Method
The production amounts to 70 q of grapes per hectare (a little more than 50 hectolitres of wine per hectare).
Vinification & Aging
The grapes are handpicked and placed in boxes of 8 kg; the harvest takes place during the second-third decade of October. The winemaking requires a gentle destemming and pressing of the grapes; the clusters are perfectly whole when they reach the cellar; the fermentation is in steel tanks with a 14-day maceration. The aging takes place in inox steel barrels for 8 months and then another 3 months in the bottle.

Longevity
Flowery and gentle, please consume when young to enjoy its freshness. It ages surprisingly well in the bottle.
