The comment of our oenologist

The second fermentation is performed on recioto skins, a real second fermentation that brings significant fruit sweetness. Black raspberries and freshness in the bouquet; great substance and savor in the mouth, fantastic to drink. This wine should be served in medium-cup glass. With the aging in bottle, this wine develops an increasing importance of the tannin, which becomes more austere.

Terroir
Southern offshoot of the hill ridge that divides the valleys of Fumana and Marano. Clay soils in the plain and calcareous ones on the hill (altitude: 100/150 m above sea level). The climate is exposed to a light breeze.

Corvina, Corvinone 60%, Rondinella 25%, Molinara, Croatina, Oseleta 15%

Cultivation Method
20% Pergola Veronese, 80% Guyot. Density: on an average 5.000 plants/ha. Average age of vines: 20 years.
Vinification & Aging
The grapes are manually harvested and carefully destemmed. The first fermentation takes place at a controlled temperature for approximately 20 days. The second fermentation takes place in the months of February-March and lasts for approximately 7 days. Aging: Approximately 24 months in Slavonian oak barrels 350/550 l. The aging is completed by another 6 months in the bottle.
Analytical Data
Harvest in September and in the beginning of October. Alcohol 14% vol.
Longevity
Great aging capacity, however already harmonic.

Please decant this wine for 30 to 60 minutes to enjoy its fullest elegance.
