The comment of our oenologist

The Fosso di Corsano, large terracings with sea exposure that grant a fantastic maturation of the grapes. Great temperature excursion between day and night, especially between the end of summer and the time of harvest. Highly dense implants, essential terroirs composed of stones. A spectacular wine, graceful and flavorful, perfect with grilled shellfish and with fish in general. Can also be served with spaghetti aglio olio, however in the end, it is so good that one can even drink it on its own, to enjoy its greatness and perfection.

Terroir
Altitude: approximately 200 - 350 m above sea level. In the main vineyard, around 3 ha, the soil is slate and full of chalk; in the remaining plots with an extension of approximately 2 ha, the soil is sandy. Climate: between sea and mountains.

Cultivation Method
Guyot with average density of 8.400 stems per hectare.
Vinification & Aging
Manual harvest in the last week of September and in the first two weeks of October, division according to the maturation of the different plots of land. Short, cold maceration, separated fermentation at low temperatures. Aging on own yeasts for six months in steel vats. Bottling in March, followed by another 2 to 3 months of aging in the bottle.

Alcohol: 13,5% vol.
Longevity
Aging is possible, however already now an absolutely excellent wine.
